This lemon cake is simple and delicious. The addition of soda water makes the cake particularly fluffy. The cake stays fresh for days.
Also with apples, baked in a springform pan, the cake is a dream. For this, peel 4-5 small apples, remove the core, cut it into cubes and fry it together with sugar and cinnamon.
The baking time does not change.


1c butter
1 1/2c sugar
2c flour
5 eggs
1 tbsp baking powder
1 tsp vanilla extract
1 lemon (juice and zest)
4-5 tablespoons of soda water
Powdered sugar to powder the cake

Combine butter, sugar and vanilla sugar. Whisk until smooth. Add the eggs one by one.
Add lemon juice, zest, flour and baking powder. Finally, add soda water.
Pour the dough into a greased cake mold and bake in the preheated oven at 350 degrees for about 45 minutes.
