I can not get enough of this Christmas biscuit. Heidesand is such a delicious pastry, easy to prepare and really nice.
A pastry for the winter season.


1 c of butter
3 c flour
1/2 c of sugar
1 c ground almonds
1 pinch of salt
1 tsp vanilla sugar
1 egg yolk
Grated peel of an untreated lemon

Mix all the ingredients into a smooth dough and form rolls with a diameter of 1 in.
Wrap the dough in a plastic film and place in the refrigerator for two hours.
Cut from the rolls about 0.2 in thick slices and put on a baking sheet laid with baking paper. In the preheated oven, on the middle rail, bake at 350 F for 10-15 minutes until they are golden yellow
Immediately after baking, sprinkle the biscuits carefully in the sugar mixture.
For the sugar mixture mix 1/4 c of fine sugar with 3 tsp of vanilla sugar.
